Pumpkin Chai Spice Ice Cream (vegan)

Autumn ain’t over yet. THERE’S STILL TIME TO CONSUME PUMPKIN SPICE ERRTHING.

Starting with this ice cream. It’s basically pumpkin pie in ice cream form. a.k.a best of all worlds. And did I mention it’s sweetened entirely with dates? Yup. Dig in.

Pumpkin Chai Spice Ice Cream (vegan)

1 can pumpkin purée
1 can full-fat coconut milk
22ish pitted dates (I use mazafati)
1 tsp cinnamon
1/2 tsp ginger (I used dried powder)
1/2 tsp nutmeg
1/4 tsp cardamom
1/2 tsp salt
3/4 cup chai tea
splash vanilla (optional)
1/4 tsp guar gum (optional)

Brew 3/4 cup chai tea (steep it extra long to make sure it’s concentrated). Throw it all in a blender and blend ’til it’s… blended. Chill the mixture until it’s… y’know, chilled. Follow your ice cream maker’s instructions.

EAT IT ALL.
