Double Chocolate Chai Muffins (Gluten free & vegan)




These little morsels walk the line between healthy snack and dessert. In fact the second time I made them I forgoed controlled serving sizes and put them in a 9 inch brownie pan. They have a delicate crumb that could also make for a lovely cake…


But calling them muffins makes them healthy. Actually they are healthy now that you mention it…


Breakfast? Lunch? Midnight snack in bed with coconut milk ice cream while watching Orange is the New Black on your laptop? I think so.


Makes 9
2 C oats
1 C brown rice flour
½ C xylitol or sugar
¼ C tapioca flour*
½ tsp salt
1 tsp baking powder
1 t soda
½ tsp guar gum**
½ tsp each of ginger, cardamom & nutmeg
1 tsp cinnamon
¼ C cocoa
¼ C coconut oil
splash vanilla
2 C almond milk
1 dropper full or 1 packet stevia
Handfuls of:
Chocolate chips
Chopped Nuts (pecans, walnuts or slivered almonds!)
-Pulverize oats in blender until powdery
-Whisk together dry
-Melt coconut oil in microwave
-Mix together wet
-Add wet to dry
-Stir in choc chips n’ nuts
-Bake at 350 until delicious (pokey thing comes out clean, about 20 mins)
*or potato starch but not potato flour
**or xanthum gum
